The Sushi Chef role at GCRG is a pivotal position responsible for preparing sushi and other menu items with precision and artistry to exceed customer expectations. This position demands expertise in sushi preparation techniques, including knife skills, fish filleting, and ingredient assembly. The role involves maintaining cleanliness and safety standards in the kitchen, managing food inventory, and coordinating with the Kitchen Manager to order supplies. The Sushi Chef will be integral to managing kitchen operations by ensuring food quality, consistency, and presentation meet GCRG's high standards. Responsibilities include preparing sushi according to established recipes, washing and chopping ingredients, monitoring food storage and safety protocols, conducting equipment maintenance, and encouraging positive customer interactions through product promotion. Job Duties

  • Prepare sushi for service
  • ensure that all kitchen equipment is clean and professional in appearance at all times
  • gather all necessary sushi ingredients and prepare them by washing, chopping, slicing, dicing and assembling them for customer purchase
  • manage food inventory when necessary
  • maintain a safe work environment
  • encourage good customer relations through product promotion
  • order product in cooperation with Kitchen Manager
  • maintain food quality standards including consistency and presentation
  • prepare ingredients needed for recipes of menu items
  • prepare food items according to prescribed recipes
  • coordinate proper food storage according to standard operating procedure
  • prepare assigned food items
  • wash and clean raw food products
  • peel, dice, shred and slice food products using kitchen equipment
  • measure and assemble ingredients and cook items according to recipes and menu specifications
  • grill, deep fry, bake, broil and microwave raw and prepped foods
  • complete daily and weekly cleaning and maintenance of equipment
  • stock and restock items on line according to specifications
  • keep work area neat and clean at all times
  • clean and maintain equipment used in food preparation
  • check the quality of raw or cooked food products to ensure that standards are met
  • check the quantity and quality of received products
  • order food or other supplies needed to ensure efficient operation
  • complete food temperature checks before service
  • store food properly and safely, marking the date and item
  • report necessary equipment repair and maintenance to supervisor
  • maintain daily production records
  • correctly prepare all food served following standard recipes and special diet orders
