Delaware North is currently hiring seasonal Sushi Cooks to join their food service team at Comerica Park. This role offers the chance to showcase culinary skills while working in a dynamic and visible kitchen environment. The Sushi Cook will partner with management teams to plan menus, maintain food quality standards, train kitchen team members, and operate kitchen equipment efficiently. This seasonal position is paid competitively, ranging from $17.70 to $24.00 per hour, with flexible work schedules that may include days, evenings, and weekends. Working as a Sushi Cook at Delaware North involves more than food preparation. The role requires attention to detail in reviewing menus and customer orders, complying with portion sizes and quality standards. Responsibilities include slicing and portioning fish, seafood, and vegetables according to established standards and maintaining a clean and organized work area. Kitchen sanitation and proper food storage are priorities to ensure freshness and safety. Additionally, the Sushi Cook will be responsible for controlling waste, training new cooks, performing opening and closing duties, side work, and inventory management at the end of the day.

Ideal candidates have at least two years of experience in back-of-the-house food service positions, particularly with seafood and sushi preparation. Essential skills include the ability to read and comprehend prep sheets and recipes accurately, basic math skills for measuring and following recipes, and manual skills required for chopping, mixing, blending, and operating kitchen equipment. Physically, the position demands the ability to lift up to 35 pounds, reach up to seven feet, bend, squat, and endure standing or walking throughout shifts in varying noise levels and temperature conditions.

Job Requirements

  • Must be able to lift up to 35 lbs to and from freezers and ovens, reach up to seven feet, twist, bend, and squat
  • Standing and walking for the entire length of shift in moderate to high noise levels
  • Manual ability to chop, mix, blend, whip a variety of foods and liquids and operate kitchen equipment
  • Exposed to variable temperatures

Job Qualifications

  • At least 2 years of previous experience in a back-of-the-house food-service position
  • Experience preparing seafood and sushi
  • Ability to read and comprehend prep sheets and recipes
  • Basic math skills, with the ability to calculate and follow recipe measurements

Job Duties

  • Review menus and customer orders to determine type and quantities of food to be prepared and comply with all portion sizes, quality standards, department rules, policies, and procedures, ensuring proper food temperatures are maintained, food is stored correctly, the freshness and quality of all menu items, and packages all products to proper specifications
  • Slice and portion fish, seafood, and vegetables according to established standards
  • Keep workstation, coolers, and equipment clean, organized, sanitized, and sufficiently stocked, as well as maintaining the kitchen and storage facilities in a sanitary condition
  • Use waste control guidelines and record all waste on the spoilage sheet
  • Train new cooks as needed
  • Perform opening, closing, and side work duties and end-of-day inventory in accordance with guidelines
