Job Requirements
- High school diploma or equivalent preferred
- Previous experience in sushi preparation or Japanese cuisine
- Ability to follow recipes, portion controls, and presentation standards
- Knowledge of food safety and sanitation
- Ability to maintain a clean and organized work station
- Strong communication skills
- Ability to work in a fast-paced environment
- Must be able to stand for extended periods
- Willingness to work flexible hours including weekends and holidays

- Relevant experience in Japanese style cooking
- Relevant experience working in a sushi restaurant
Job Duties
- Perform all duties as directed by manager or chef
- Prepare food items at the station according to specifications and pre-set time limits
- Follow standard preparation and cooking procedures
- Follow all recipes, portion controls, and presentation specifications
- Coordinate delivery of all foods within pre-set time standards
- Set up, maintain, and close stations including cleaning and prepping food items
- Ensure safety and sanitation standards are maintained
- Use personal protective equipment properly
- Maintain clean, neat, and well-groomed appearance
- Respond to all call backs and echos to ensure timely food preparation
- Maintain proper pH for rice and document in pH log
- Ensure hot food stays hot and cold food stays cold
- Record all waste on standard form
- Communicate product run outs, equipment issues, and service problems to MOD
- Welcome and acknowledge guests according to company standards
- Assist with cleaning, sanitation, and organization of kitchen and storage areas
- Order ingredients and supplies as directed
- Develop and maintain positive working relationships
- Ensure adherence to quality expectations and standards
- Perform additional responsibilities as requested by chef or manager
