The role of Sushi Clerk is integral to the seafood department, reporting directly to the Seafood Lead and is classified as a non-exempt, hourly paid position. This position demands that the Sushi Clerk provides exceptional customer service through efficient, accurate, and safe preparation and handling of sushi products. A critical component of the job involves strict adherence to food safety standards, proper merchandise rotation, stocking, and merchandising to maximize product freshness and sales outcomes. The Sushi Clerk will be expected to operate a variety of department-specific equipment including knives, sushi preparation appliances, and packaging machinery safely and competently. Experience or skills in knife handling, especially the ability to maintain a consistent grip to cut fish and seafood precisely, are essential for this role. Job Requirements
- High school diploma or GED
- Possess a food handling license
- Ability to work flexible shifts including full or part-time
- Able to work in refrigerated environment
- Capable of lifting, standing, and walking for extended periods
- Strong organizational and multitasking skills
- Effective oral and written communication skills
- Willingness to follow safety and health regulations
- Ability to handle fast-paced and sometimes stressful environment
- Able to operate sushi department equipment safely

Job Qualifications
- High school diploma or GED
- 2 to 4 years of work experience in a grocery chain or retail establishment preferred
- Experience in a similar or comparable work environment
- Previous retail or restaurant experience preferred
- Possession of a food handling license
- Strong work ethic and positive attitude
- Ability to communicate effectively both verbally and in writing
- Ability to read, analyze and interpret procedure manuals
- Proficiency using in-store computer and scanning systems
- Adept at handling knives and sushi preparation equipment
Job Duties
- Assist the Manager in meeting sales and profit projections through sushi preparation and adherence to company policies
- Work various shifts or days as assigned based on business needs
- Ensure sushi is prepared, handled, stocked, rotated, and merchandised correctly
- Safely operate department equipment including knives, appliances and sushi equipment
- Maintain proper knife grip for cutting fish and seafood to specification
- Work in refrigerated environment at approximately 40 degrees Fahrenheit or lower
- Meet productivity standards set by the company
- Use in-store computer and scanning equipment
- Weigh, price, label, organize and rotate sushi products according to standards
- Assist customers with special requests and questions
- Support promotional activities within the store and department
- Maintain communication with store management and associates
- Perform additional tasks as assigned by the Manager
