We are currently seeking a skilled and motivated Sushi Chef to join our culinary team. This position offers competitive pay ranging from $19.75 to $22.75 per hour plus tips, reflecting the value we place on experienced culinary professionals. The Sushi Chef will be instrumental in preparing a variety of sushi items, including rolls, nigiri, sashimi, and other specialty menu choices. Your role will require excellent knife skills, attention to detail, and the ability to maintain high-quality standards during busy service hours. The position requires working efficiently under pressure while maintaining cleanliness and safety standards according to Washington state regulations.

As a Sushi Chef at Trapper's Sushi, you will be responsible for maintaining ingredient freshness, ensuring proper storage practices, and adhering to FIFO (First In, First Out) inventory rotation. Collaboration with both the kitchen and front-of-house teams is essential to ensure smooth and timely service. Additionally, you will assist with daily preparation tasks, inventory checks, and restocking to keep the kitchen running efficiently. Job Requirements

  • Standing for extended periods in a fast-paced kitchen environment
  • Lifting up to 30 pounds (ingredients, containers, equipment)
  • Repetitive motions including chopping, rolling, and plating

Job Qualifications

  • 1-3 years of sushi preparation experience preferred
  • Strong knife skills and familiarity with sushi preparation techniques
  • Ability to work quickly, cleanly, and consistently under pressure
  • Positive attitude and excellent communication with team members
  • Washington Food Handler Certification or ability to obtain shortly after hire
  • Flexible availability including evenings, weekends, and holidays

Job Duties

  • Prepare sushi rolls, nigiri, sashimi, and other menu items to company specifications
  • Maintain ingredient freshness, proper storage, and accurate FIFO rotation
  • Keep a clean, organized, and sanitized workstation throughout service
  • Follow all food safety practices and Washington food handling regulations
  • Collaborate with the kitchen and front-of-house teams to support smooth service
