Kanki is a renowned restaurant specializing in authentic Japanese cuisine, particularly teppanyaki and sushi, with locations in the Raleigh-Durham area. Known for its vibrant and interactive dining experience, Kanki offers guests a unique way to enjoy their meals prepared live in front of them by expert chefs. The restaurant prides itself on its lively atmosphere, where diners are seated around large tables featuring teppan grills. The role being offered is for a full-time Sushi Chef who will play a central role in maintaining the high standards of food quality and guest satisfaction at Kanki. This is a hands-on position where the chef will be responsible for preparing sushi and sashimi dishes strictly following Kanki's established recipes. Creativity and a deep appreciation for Japanese culture and sushi origins are essential, as this role requires not only technical skill but also the ability to present sushi dishes in an appealing and innovative manner. The Sushi Chef will also need to possess excellent interpersonal skills, as a key part of the role involves greeting and engaging with guests to enhance their dining experience, adding a personal touch to the meal service.
The position offers an hourly wage ranging from $17.00 to $20.00, depending on experience, creativity, and expertise. In addition to the base pay, employees have the opportunity to earn tips, with an 18% gratuity automatically included on parties of six or more. The work schedule includes day and night shifts, with weekend and holiday availability required. Notably, the restaurant closes by 9:00 pm on weekdays and 9:30 pm on weekends, ensuring a consistent and reasonable work-life balance without late-night hours.
The Sushi Chef must comply with all North Carolina sanitation laws and maintain a clean, neat, and organized workspace. Experience in cleaning fish from whole and proficiency in following senior chef instructions are important job functions. The restaurant is willing to provide training for candidates who demonstrate the aptitude and eagerness to learn, making this an excellent opportunity for aspiring sushi chefs looking to develop their skills in a dynamic and supportive environment. Being ServSafe certified is considered a plus but not mandatory.
