Job Requirements

  • formal culinary education preferred
  • minimum of 2 years experience in sushi preparation or Japanese culinary field
  • serve safe certification
  • ability to work under pressure in a fast-paced environment

Job Duties

  • Prepare sushi rice with correct proportions of vinegar
  • demonstrate knowledge of nori and alternatives

  • identify freshness of seafood
  • sharpen knives and butcher fish
  • prepare tempura and basic sauces
  • maintain hygiene and serve safe certification compliance
