The role of Sushi Chef I is the entry-level position within our culinary team and is designed to be a developmental opportunity. This role will provide you with the essential skills needed to master sushi preparation, including knife skills, sushi rolling fundamentals, and food safety protocols. As a Sushi Chef I, you will be responsible for preparing traditional Japanese sushi rice, chopping, slicing, and filleting various types of fish, and maintaining a clean and safe work environment. You will ensure that all ingredients used are of the highest quality and that the food prepared meets the company’s standards for presentation, portion size, and food safety.
This role also demands the ability to thrive under pressure while maintaining consistent restaurant quality standards during busy periods. Your responsibilities will include inspecting the quality of fresh produce and fish, ensuring all utensils and equipment are sterilized, and communicating effectively with customers to ensure they feel valued and engaged. Job Requirements
- Minimum 6 months in the food service industry
- Sushi rolling experience preferred
- Ability to read, write and communicate in English
- Valid food handler’s license
- Ability to stand for long periods of time
- Ability to work under pressure
- Sound judgement

Job Duties
- Cutting, slicing and filleting different types of fish and vegetables
- Inspecting the quality of fruits, vegetables, and fish used to prepare sushi dishes and informing the store team leader when quality is sub-standard
- Preparing various types of sushi dishes according to established guidelines on quality, portion size, presentation, and food safety
- Maintaining a clean work environment to prevent food contamination
- Reporting any problems with kitchen equipment to the manager on duty
- Sterilizing all utensils, instruments, and equipment used in sushi preparation before every use
- Greeting and communicating with customers to ensure that they feel valued
