The Sushi Chef I position at Hana Group serves as an entry-level role designed for individuals eager to develop their culinary skills and grow within the company. This role focuses on mastering essential techniques such as knife skills, sushi rolling fundamentals, and food safety protocols. Sushi Chefs in this role are responsible for preparing traditional Japanese sushi rice, skillfully chopping, slicing, and filleting various fish types, and maintaining a clean, hygienic setting to ensure food safety standards are met. Attention to ingredient quality is paramount, as the success of each dish depends on using the freshest and highest quality components.

Job Duties

  • Cutting, slicing and filleting different types of fish and vegetables
  • inspecting the quality of fruits, vegetables, and fish used to prepare sushi dishes and informing the STL when quality is sub-standard
  • preparing various types of sushi dishes according to established guidelines on quality, portion size, presentation, and food safety
  • maintaining a clean work environment in order to prevent food contamination
  • reporting any problems with kitchen equipment to the manager on duty
  • sterilizing all utensils, instruments, and equipment used in sushi preparation before every use
  • greeting and communicating with customers to ensure that they feel valued as our customer
