Job Requirements

  • Minimum of 2-3 years of experience working as a Sushi Chef in a professional kitchen environment
  • apprenticeship from culinary school or equivalent combination of education and experience
  • active California Food Handlers Certification and/or Card
  • open availability to work swing shift, weekends, and holidays
  • must be 21 years old
  • must be able to obtain and maintain a current California gambling establishment employee permit, badge or license
  • must provide evidence of employment eligibility in the U.S.
  • must be able to pass a mandatory drug test, criminal background, and credit check

Job Qualifications

  • Minimum of 2-3 years of experience working as a Sushi Chef in a professional kitchen environment
  • apprenticeship from culinary school or equivalent combination of education and experience
  • extensive knowledge and expertise in filleting and preparing various types of fish and seafood
  • proficiency in creating a wide range of sushi dishes including rolls, nigiri, and sashimi with exceptional attention to detail
  • strong knife skills and ability to handle and prepare ingredients with precision and efficiency
  • active California Food Handlers Certification and/or Card
  • open availability to work swing shift, weekends, and holidays
  • be at least 21 years old
  • ability to obtain and maintain a current California gambling establishment employee permit, badge or license
  • evidence of employment eligibility in the United States
  • ability to pass a mandatory drug test, criminal background, and credit check

Job Duties

  • Expertly prepare sushi rolls, nigiri, sashimi, and other sushi dishes according to established recipes and standards
  • fillet and portion different types of fish and seafood with precision and consistency
  • ensure all ingredients used in sushi preparation are fresh, properly stored, and meet the highest quality standards
  • assist in maintaining adequate stock levels of ingredients, tools, and equipment necessary for sushi preparation
  • pay meticulous attention to detail when arranging and presenting sushi dishes to create an aesthetically pleasing dining experience
  • adhere to all food safety and sanitation guidelines, maintaining a clean and organized work area
  • collaborate effectively with other kitchen staff to ensure smooth operation and timely service during busy periods
