Job Requirements

  • Minimum of 2-3 years of experience as a sushi chef in a professional kitchen
  • Apprenticeship from culinary school or equivalent combination of education and experience
  • Active California Food Handlers Certification and/or Card
  • Must be at least 21 years old
  • Must be able to obtain and maintain a California gambling establishment employee permit, badge or license
  • Ability to work swing shifts, weekends, and holidays
  • Must provide evidence of employment eligibility in the U.S.
  • Must be able to pass a drug test, criminal background and credit check

Job Qualifications

  • Minimum of 2-3 years of experience working as a sushi chef in a professional kitchen environment and apprenticeship from culinary school
  • Extensive knowledge and expertise in filleting and preparing various types of fish and seafood, ensuring the highest quality standards
  • Proficiency in creating a wide range of sushi dishes, including rolls, nigiri, and sashimi, with exceptional attention to detail
  • Strong knife skills and the ability to handle and prepare ingredients with precision and efficiency
  • Active California Food Handlers Certification and/or Card
  • Open availability to work swing shift, weekends, and holidays
  • Must be 21 years old
  • Must be able to obtain and maintain a current California gambling establishment employee permit, badge or license
  • Must provide evidence of employment eligibility in the U.S.
  • Must be able to pass a mandatory drug test, criminal background and credit check

Job Duties

  • Expertly prepare sushi rolls, nigiri, sashimi, and other sushi dishes according to established recipes and standards
  • Fillet and portion different types of fish and seafood with precision and consistency
  • Ensure all ingredients used in sushi preparation are fresh, properly stored, and meet the highest quality standards
  • Assist in maintaining adequate stock levels of ingredients, tools, and equipment necessary for sushi preparation
  • Pay meticulous attention to detail when arranging and presenting sushi dishes to create an aesthetically pleasing dining experience
  • Adhere to all food safety and sanitation guidelines, maintaining a clean and organized work area
  • Collaborate effectively with other kitchen staff to ensure smooth operation and timely service during busy periods
