The Sushi Chef role at Epic is tailored for a skilled culinary professional specializing in sushi and international Southeast Asian cuisines. This position involves hands-on artistry in sushi preparation as well as mentorship for fellow kitchen team members. As part of the Epic culinary team, you will contribute creatively to the sushi menu featured at Chopsticks, one of the specialty venues on the campus, and help expand sushi offerings to additional dining locations. The role requires dedication to high-quality, fresh ingredients and culinary excellence to deliver an exceptional dining experience for staff and guests. Beyond sushi, the menu also includes dishes inspired by the diverse cuisines of China, Thailand, Vietnam, Laos, and more, giving you the chance to showcase a broad skill set and cultural knowledge. Job Requirements

  • At least 2 years of sushi preparation experience
  • International experience preferred but not required
  • Fine dining, large-volume experience preferred
  • Eligible to work in the US without sponsorship
  • Relocation to Madison, WI area with relocation assistance available
  • COVID-19 vaccination

Job Qualifications

  • At least 2 years of experience in sushi preparation
  • Experience working in fine dining or large-volume culinary environments preferred
  • Knowledge of Southeast Asian cuisines including China, Thailand, Vietnam, Laos
  • Strong culinary skills in sushi artistry and food presentation
  • Ability to mentor and guide culinary team members
  • Effective communication and teamwork skills
  • Eligible to work in the US without sponsorship

Job Duties

  • Create and roll sushi menu items using fresh, quality ingredients
  • Mentor and train kitchen staff in sushi preparation techniques
  • Collaborate on menu development to expand sushi and Southeast Asian cuisine offerings
  • Ensure adherence to food safety and hygiene standards
  • Maintain inventory and order supplies related to sushi preparation
  • Support daily culinary operations and assist in other kitchen areas as needed
  • Provide exceptional dining experiences for staff, customers, and guests
