Job Requirements

  • High school diploma or equivalent
  • Prior experience as a sushi chef or in a similar culinary role
  • Ability to stand and walk continually throughout the entire shift
  • Ability to lift, carry, and stack items weighing up to 50 lbs
  • Ability to bend, stoop, and reach while carrying items up to 50 lbs
  • Manual dexterity for cutting and chopping foods and performing related tasks
  • Willingness to work in an environment with exposure to extreme heat, steam, and cold
  • Flexibility to work full shifts without telework or flexible scheduling
  • Demonstrated adherence to food safety and sanitation standards

  • Ability to work in a fast-paced environment and maintain a consistent fast tempo
  • Good and positive attitude
  • Good understanding of menu and cooking methods including knife skills, use of stove, fryer, steamer, and oven
  • Reliability and good attendance record
  • Ability to work in a team environment and communicate effectively
  • Ability to follow all health and safety policies and procedures
  • Ability to function in primary chef, secondary chef, and sushi end stations

Job Duties

  • Operate in the sushi bar and back of the house ensuring safe and effective food preparation according to specifications or requests
  • Ensure ingredients and final products are fresh and complete
  • Follow recipes including measuring, weighing, and mixing ingredients
  • Bake, grill, steam, boil, fry, and chop meat, seafood, fruits, vegetables, and grains
  • Present and garnish final dishes attractively
  • Maintain a clean and safe work environment
  • Contribute to stocking, ordering, and purchasing of ingredients by communicating needs to Head Sushi Chef
  • Communicate any issues with kitchen equipment, utensils, or other supplies to Head Sushi Chef
  • Handle and store different types of ingredients appropriately
  • Maintain food and safety sanitation standards, policies, and procedures
  • Assist serving staff as needed
  • Assist other kitchen staff as needed
  • Clean dining room and areas outside of kitchen as needed
  • Perform other duties as assigned
