- previous experience as sushi chef highly desirable

Job Duties
- Greets and welcomes guests upon arrival to the sushi bar/lounge area
- prepares a variety of meats, seafood, poultry, vegetables and other food items using kitchen equipment
- responds promptly and courteously to guest requests and provides information about food
- ensures guests are satisfied with food quality and service
- performs shift opening and closing duties including cleaning of neta cases, cutting boards, equipment, and floors
- complies with company standards on food portioning, cooking methods, quality standards, recipes, safety and sanitation
- maintains kitchen, cooking areas, sushi counters, kitchen equipment, refrigeration units and food storage areas clean and organized
- reports kitchen/sushi equipment or maintenance issues to manager on duty and head sushi chef
- adheres to guidelines on food presentation and garnishes
- properly handles ready to eat raw foods
- handles, stores, labels and rotates foods in accordance with safety laws
- follows Ecosure best practices for food handling and storage
- uses knives and tools to prepare food accurately
- keeps head sushi chef informed of inventories
- presents a clean and neat appearance and courteous manner with guests
- notifies MOD if guests are dissatisfied or accidents occur
- adheres to alcoholic beverage service guidelines
- assists with preparation of sushi items and helpers
- participates in guest special occasion celebrations
- may photograph or be photographed with guests
- performs other duties as assigned
