The Sushi Chef role at Noii Sushi is integral to the restaurant’s mission to deliver a premium Japanese dining experience. This full-time position offers a competitive hourly rate ranging from $28 to $32, plus tips, reflecting the skill and dedication required. Reporting directly to the Sushi Bar Manager and Executive Chef, the Sushi Chef will specialize in the art of Nigiri and Sashimi preparation, showcasing expert knife skills, deep product knowledge, and precision in every piece crafted. The ideal candidate will have a profound passion for traditional Japanese techniques and the ability to work efficiently in a fast-paced, high-standard kitchen environment. This position demands meticulous attention to detail, mastery of fish fabrication, and a refined palate for balancing flavors and presentation aesthetics.
The Sushi Chef will be responsible for preparing both traditional and contemporary styles of nigiri and sashimi with a focus on speed, accuracy, and artistic expression. The role also includes breaking down and portioning whole fish with expert care while maintaining stringent quality control standards, ensuring all seafood meets freshness requirements and inventory rotation protocols. Working closely with the sushi team, the chef will contribute to a smooth dining service, assist with daily preparations such as marinating and sauce making, and uphold the highest sanitation and food safety standards as per state and local health codes. Furthermore, the Sushi Chef will take part in mentoring junior team members, fostering skill development and maintaining station upkeep. Job Requirements
- Minimum 4 years of hands-on experience preparing nigiri and sashimi in a professional sushi kitchen
- Food handler’s certification
- Ability to work calmly and efficiently in a high-pressure, fast-paced environment
- Familiarity with seafood safety regulations
- Strong knife skills and fish fabrication expertise
- Excellent attention to detail and plating presentation
- Good communication and teamwork skills

Job Duties
- Prepare traditional and modern nigiri and sashimi with precision, speed, and artistry
- Break down, clean, and portion whole fish with expertise and care
- Maintain strict control over fish quality, freshness, and inventory rotation (FIFO)
- Ensure all plates are presented with clean, precise cuts and proper garnishes
- Work closely with the Sushi Bar Manager and team to ensure smooth and efficient service
- Assist in daily prep, including butchering, marinating, seasoning, and sauce making
- Adhere to and uphold the highest standards of sanitation and food safety protocols, in accordance with state and local health codes
- Educate and mentor junior team members in proper techniques and station maintenance
- Interact with guests at the sushi bar when appropriate, offering insight and hospitality
