Job Requirements

  • High school diploma or equivalent
  • Previous experience as a sushi chef or similar role
  • Knowledge of Japanese cuisine and basic culinary skills
  • Ability to work in a fast-paced environment
  • Good communication skills
  • Food safety certification if applicable
  • Ability to stand for long periods
  • Willingness to work flexible hours including evenings and weekends

Job Qualifications

  • At least 1-2 years of experience as a sushi cook or in a similar culinary role, preferably in a high-volume environment
  • Strong understanding of sushi techniques, knife skills, and ingredient sourcing
  • Familiarity with Japanese cuisine and food preparation methods
  • Ability to work efficiently under pressure, multitask, and maintain attention to detail
  • Excellent communication and teamwork skills
  • Food safety certification if required by local health codes and/or sushi-specific training is a plus

Job Duties

  • Prepare and assemble sushi, sashimi, rolls, and other Japanese dishes according to restaurant recipes and standards
  • Ensure the freshness, quality, and proper storage of all ingredients
  • Create visually appealing sushi plates, garnishing dishes with attention to detail
  • Stay updated on menu items, specials, and seasonal ingredients, and be able to describe them to guests
  • Follow all food safety guidelines, including proper handling, storage, and sanitation practices
  • Always maintain a clean and organized workstation, including proper disposal of waste and cleaning of tools and equipment
  • Work closely with other kitchen staff, including line cooks and kitchen managers, to ensure efficient kitchen operations
  • Occasionally interact with guests at the sushi bar, providing information on menu items and addressing special requests
