Job Requirements

  • High school diploma or equivalent
  • professional training or certification in culinary arts or Japanese cuisine preferred
  • minimum of 2 years experience in sushi preparation
  • knowledge of food safety and sanitation regulations
  • physical ability to stand for long periods and perform repetitive motions
  • attention to detail and a strong sense of responsibility
  • ability to customize orders according to customer preferences and allergy restrictions

Job Qualifications

  • Proven experience as a sushi chef or similar role
  • extensive knowledge of Japanese sushi preparation techniques
  • familiarity with food safety and hygiene standards
  • ability to work under pressure in a fast-paced kitchen environment
  • excellent knife skills and precision
  • good communication skills to coordinate with kitchen staff and servers
  • passion for Japanese cuisine and commitment to quality

Job Duties

  • Expertly cutting, slicing, and filleting different types of fish
  • inspecting the quality of fruits, vegetables, and fish used to prepare sushi dishes and informing the Executive Chef when quality is sub-standard
  • preparing various types of sushi dishes according to established guidelines on quality, portion size, presentation, and food safety
  • maintaining a clean work environment in order to prevent food contamination
  • regularly taking inventory of food supplies and other products
  • reporting any problems with kitchen equipment to the manager on duty
  • sterilizing all utensils, instruments, and equipment used in sushi preparation before every use
  • communicating with wait staff to ensure that special requests and food allergy considerations are met
