We are currently seeking a highly skilled sushi chef to join our culinary team. The ideal candidate will have proven experience working in upscale sushi restaurants and a thorough knowledge of food safety regulations. This full-time position requires a sushi chef who can expertly prepare traditional Japanese sushi rice, chop, slice, and fillet a variety of fish, and customize orders based on customer preferences and dietary restrictions such as allergies. The sushi chef plays a critical role in maintaining the quality and presentation of sushi dishes, working closely with wait staff to ensure that special requests are honored.

The role also demands excellent time-management skills as well as the ability to work effectively under pressure during busy dining periods without compromising the restaurant’s high standards. Additionally, the sushi chef must maintain a clean and organized workstation, take inventory of supplies, monitor food quality diligently, and promptly communicate any issues related to kitchen equipment or food safety to management. Holding certifications such as ServeSafe or Food Handler’s certification is preferred and owning personal knives along with exceptional knife skills is a significant advantage. Ultimately, the right candidate will bring passion, precision, and professionalism to our kitchen team, contributing to a memorable dining experience for every guest.

Job Duties

  • Expertly cutting, slicing, and filleting different types of fish
  • Inspecting the quality of fruits, vegetables, and fish used to prepare sushi dishes and informing the Executive Chef when quality is sub-standard
  • Preparing various types of sushi dishes according to established guidelines on quality, portion size, presentation, and food safety
  • Maintaining a clean work environment in order to prevent food contamination
  • Regularly taking inventory of food supplies and other products
  • Reporting any problems with kitchen equipment to the manager on duty
  • Sterilizing all utensils, instruments, and equipment used in sushi preparation before every use
  • Communicating with wait staff to ensure that special requests and food allergy considerations are met
