The sushi chef role at Food City is a unique and engaging position dedicated to producing high-quality sushi for the store's fresh sushi program. The chef will be responsible for all aspects of sushi preparation, which includes handling fresh finfish, shellfish, and produce with meticulous attention to food safety and quality standards. Since the sushi production takes place in front of customers, the chef must maintain an orderly and clean workspace, ensuring visible commitment to hygiene and professionalism. Interaction with customers is a vital component of this role; the sushi chef will greet and engage guests, offer samples, answer questions, and tailor sushi rolls to customer preferences, thereby enhancing the shopping experience. Beyond hands-on production, the chef will also train and assist other associates, help manage inventory to avoid shortages, and assist in marketing efforts through scheduled sampling and signage upkeep.

Adherence to Food City’s policies and all relevant food safety regulations at the federal, state, and local levels is critical. The chef must consistently monitor ingredient temperatures and shelf lives, inspect product quality, and maintain comprehensive food safety records, especially concerning sushi rice preparation. Job Duties

  • Acknowledge, greet, and engage all guests
  • prepare various finfish, shellfish, and fresh produce items to be used in the sushi
  • prepare, test, and maintain food safety records for sushi rice
  • assemble, package, and label various forms of sushi, sides, and spring rolls for sale to the customer
  • assemble custom sushi rolls at the request of the customer
  • train and assist other associates as needed
  • comply with all Food City policies and procedures as well as federal, state and local government food safety standards
