Job Requirements

  • Prior cooking experience preferred or willingness to learn
  • Ability to stand for extended periods
  • Ability to lift 25-50 pounds

Job Qualifications

  • 2 years culinary education or experience and/or training as a sushi chef in an Asian restaurant
  • Must have flexible schedule to work during days, nights, weekends, and some holidays as needed
  • Knowledgeable in Asian and/or Japanese cuisine, as well as sushi types and rolling technique
  • Must be able to stand for long periods of time
  • Ability to lift and move 25-50 pounds
  • Be collaborative, using a team approach to creating an equitable workplace environment and have respectful working relationships

Job Duties

  • Prepare sushi dishes, including rolls, sashimi, tartares, and nigiri, following established recipes and presentation standards
  • Ability to shuck oysters and clams
  • Ensure the quality and freshness of all raw ingredients, especially seafood
  • Collaborate with kitchen staff to maintain smooth and efficient service operations
  • Maintain cleanliness, organization, and safety in the sushi and raw bar station and kitchen
  • Inspect and maintain sushi bar equipment, reporting any issues to management
  • Follow food safety and sanitation protocols to meet the highest hygiene standards
  • Engage with guests, delivering exceptional service and fostering memorable dining experiences
  • Produce sushi rice daily, ensuring proper preparation and quality
