Job Requirements
- Associate’s degree in culinary arts preferred
- Minimum three years of related culinary and kitchen supervision experience required
- Preferred three years executive chef or kitchen management experience
- Food Handlers Card required upon hire
- Valid Arizona Driver’s License required upon hire

Job Duties
- Supervises the personnel assigned to the section
- Plans, establishes, and revises work assignments
- Interviews, selects, and recommends hiring of personnel
- Evaluates staff performance
- Initiates recommendations for changes in classification, salary action, promotion, demotion, transfer and termination
- May settle employee problems and administer appropriate disciplinary action
- Processes and monitors production staff time cards for end of pay period reporting
- Supervises unauthorized usage of overtime hours and purchased labor
- Plans, establishes, and revises production schedules to meet business needs and standards
- Plans café and catering menus
- develops service standards and protocols
- Responsible for team adherence to standards, use of recipes, food presentation guidelines, garnishing techniques and financial cost control measures
- Forecasts production needs and prepares purchase orders
- Monitors receiving and storage
- ensures compliance with storage protocols and inventory control guidelines
- Inspects all areas for compliance with Maricopa County Health Department Food Code
- Maintains sanitation standards
- Oversees quality and service reports
- Evaluates food quality and temperatures
- Prepares action plans to correct variances
- Ensures food handling follows HACCP guidelines
- Monitors HACCP reports
- Oversees food temperature checks before and during service periods
- Maintains catering standards including menus, costing, pricing, presentation, and service
- Schedules and prepares menus for special events
- Oversees storeroom and receiving functions
- Manages storeroom staff and coordinates deliveries and requisition of food items
- Monitors issuing and ordering of supplies
- Ensures proper handling, processing, serving and storage of food items
- Documents compliance with HACCP procedures
- Negotiates with suppliers regarding prices, deliveries, and specifications
- Ensures company purchasing procedures are followed
- Develops additional or alternate sources of supply
- Maintains purchasing procedures for disaster situations
- Contacts suppliers for quotations
- Recommends suppliers and schedules deliveries
