The Substitute Utility Steward role is a vital position within the Culinary and Food & Beverage Department at Mandarin Oriental, New York. As a Substitute Utility Steward, you play a crucial part in maintaining the cleanliness and organization of the kitchen and support areas to ensure seamless daily operations. Your responsibilities include cleaning and dishwashing duties, garbage and box removal, silver polishing, sweeping, mopping, and assisting with other cleaning or organizational needs such as cooler upkeep. You will also support kitchen staff by helping with plating as needed. This role requires flexibility, a proactive attitude, and a commitment to contribute constructively to the stewarding team's goals and department mission. As part of this position, you will be expected to adhere strictly to hygiene standards and maintenance schedules for equipment such as dishwashers, contribute to inventory control of kitchenware and banquet supplies, support banquet functions with equipment setup, and follow the department’s training and communication protocols.

Job Requirements

  • High school diploma or equivalent
  • two up to date sanitation classes
  • minimum of 1 year experience in food and beverage or other professional cleaning business
  • possess a pleasant and outgoing personality
  • good knowledge of stewarding and banquet operations
  • possess superior organization skills
  • ability to pay attention to detail, handle multiple tasks and show a high level of patience

Job Duties

  • Follow the goals and missions for the stewarding department
  • help to do the inventory of China, glasses, silver and hollowware from the outlets and the main storage
  • provide enough equipment (China, glasses, silver) to the outlets and banquets for the operations
  • follow the cleaning schedule for the kitchen, pastry, garden manger, banquets, cafeteria and coolers
  • follow the weekly schedule for the employees
  • help kitchens whenever necessary
  • do and follow the requisition for banquets from the B.E.Os.
  • follow the cleaning schedule for the dumpster
  • follow the maintenance schedule for the dishwasher machines
  • assist and provide the equipment for any banquets function
  • assist and help banquets kitchen colleagues to plate up
  • follow the hygiene and control program for the kitchen and surround areas
  • develop and follow the training program for stewards
  • follow the standard and procedures for department
  • establish a good communication with the supervisor and colleagues
