We are currently hiring a PM Cook who will play a critical role in maintaining the consistency and quality of our culinary offerings during the evening service. This is an excellent opportunity for a motivated cook who desires to grow professionally and contribute to a unique culinary environment where creativity meets consistency. Responsibilities include preparing a variety of meats, seafood, poultry, vegetables, and other food items using an array of kitchen equipment including broilers, ovens, grills, and fryers. The PM Cook will assume full responsibility for the quality of all products served from their station, adhering strictly to standard portion sizes, cooking methods, quality standards, and kitchen protocols.
In this role, the PM Cook will stock and maintain sufficient levels of food products at line stations to ensure smooth service, portion food items to recipe specifications, and maintain cleanliness and sanitation within the work area. Culinary presentation is also fundamental, requiring adherence to specific plate presentation and garnish setup standards. Teamwork and communication are essential as the PM Cook will collaborate respectfully with both front and back-of-house staff.
Tasks will also include managing proper food handling and rotation, timely completion of assigned tasks, tracking food waste, assisting with food prep during slow periods, properly opening and closing the kitchen, and performing additional duties such as dishwashing, cleaning, and other projects as directed by the chef or hotel management. The PM Cook must have the ability to handle returned dishes promptly and report issues to management. Participation in scheduled employee meetings to provide suggestions and improvements is encouraged, reinforcing a culture of continuous improvement.
The ideal candidate has a minimum of two years of cooking experience and the ability to read and comprehend recipes and restaurant tickets. Physical stamina is important since this position requires standing for extended periods, frequent lifting up to 50 pounds, and the ability to bend, stoop, and reach as needed. Basic knowledge of kitchen sanitation, safety protocols, and allergy-aware food service is essential to succeed in this role.
Working conditions include a busy kitchen environment with sometimes loud noise levels, exposure to temperature variations including outdoor settings, and potential hazards such as cuts, slips, trips, falls, and burns. The position involves longer shifts, including evenings and weekends, and requires the employee to follow established timelines and cooperate with a team committed to excellence. Frequent hand washing and maintaining hygienic practices are mandatory.

Job Requirements
- Ability to read/comprehend recipes and restaurant tickets
- A minimum of 2 years of cooking experience
- Must be able to communicate clearly with managers, kitchen and dining room personnel

- Be able to work in a standing position for long periods of time

Job Duties
- Prepares a variety of meats, seafood, poultry, vegetables and other food items using recipes for cooking in broilers, ovens, grills, fryers and other kitchen equipment
- Assumes 100% responsibility for quality of products served
- Knows and complies consistently with standard portion sizes, cooking methods, quality standards and kitchen rules, policies and procedures
- Stocks and maintains sufficient levels of food products at line stations to assure smooth service period
- Portions food products prior to cooking according to standard portion sizes and recipe specifications
- Maintains a clean and sanitary work station area including tables, shelves, grills, broilers, fryers, sauté burners, convection oven, flat top range and refrigeration equipment
- Follows proper plate presentation and garnish set up for all dishes
- Maintains a respectful attitude toward all team members, both front and back of house
- Handles, stores and rotates all products properly
- Completes required tasks within assigned time frames
- Tracks and reports any food waste
- Assists in food prep assignments during off-peak periods as needed
- Opens and/or closes the kitchen properly and follows the closing checklist for kitchen stations
- Assists others in closing the kitchen
- Cooks only items generated from the restaurant point-of-sale system
- Performs related duties as needed such as helping to wash dishes, preparing recycling, cleaning around restaurant and help with any other projects as assigned by the chef
- If a meal is returned for any reason, correct the problem and report the return to the manager
- Attends all scheduled employee meetings and brings suggestions for improvement
- Performs other related duties as assigned by the Chef or hotel management
