The Sous Chef / Pitmaster position is ideal for individuals who have a deep passion for barbecue, food quality, and maintaining a clean, efficient kitchen environment. The successful candidate will be responsible for preparing and seasoning meats for smoking following established recipes and standards, operating and monitoring smokers and grills, and executing essential prep work such as trimming meats and making rubs, sauces, and sides. This role demands hands-on involvement in maintaining food safety and sanitation practices at all times, assisting with inventory management, receiving deliveries, and organizing stock rotation. In addition, this position supports the Head Chef / Pitmaster with kitchen organization and workflow, ensuring a seamless operation during busy service hours.
Working morning shifts primarily focused on preparation, the Sous Chef / Pitmaster can expect a dynamic start to their day, engaging closely with the cooking process from smoke seasoning to managing equipment. The candidate must demonstrate a strong work ethic and the ability to work independently during early hours. Physical requirements include the ability to lift up to 50 pounds and stand for extended periods, which are essential for managing the hands-on nature of this position. Weekend availability is preferred to support weekend service demands.

Job Requirements
- High school diploma or equivalent
- previous kitchen or cooking experience preferred
- knowledge of food safety and sanitation standards
- ability to work morning shifts
- weekend availability preferred
- physical ability to lift up to 50 lbs and stand for extended periods
- strong attention to detail and ability to follow recipes and instructions
Job Qualifications
- Previous experience as a line cook, prep cook, or pitmaster preferred
- knowledge of barbecue techniques including smoking, wood selection, temperature control is a plus
- strong work ethic and ability to work independently during early shifts
- ability to lift up to 50 lbs and stand for extended periods
- food safety certification or willingness to obtain
