The Pastry Sous Chef at Omni PGA Frisco Resort plays a crucial role in shaping the resort's pastry offerings and culinary identity. This position works directly with the Executive Pastry Chef to ensure that every dessert, amenity, and sweet experience upholds Omni’s commitment to excellence and innovation. The role requires a blend of artistic talent and precise execution, leading a skilled team responsible for creating exceptional pastry products across multiple outlets, including restaurants, banquets, golf events, in-room dining, and VIP services. The Pastry Sous Chef is entrusted with overseeing daily pastry production, ensuring consistency, quality, and elevated presentation throughout the resort. This leadership role involves meticulous planning, managing food costs, and enhancing operational efficiency to deliver seamless service that exceeds guest expectations.
In addition to culinary and operational duties, this role emphasizes leadership and team development. The Pastry Sous Chef is expected to inspire and mentor pastry cooks, fostering a culture of respect, craftsmanship, and collaboration that aligns with Omni PGA’s service philosophy. Supporting recruitment, onboarding, and the ongoing performance of the pastry team is integral to this position, along with stepping in as department leader when the Executive Pastry Chef is unavailable.
The role also demands creativity and innovation, where the Pastry Sous Chef contributes to developing signature desserts and seasonal menus that reflect the resort’s luxury identity. Balancing classic pastry techniques with modern trends, the role requires adapting recipes to accommodate dietary restrictions such as celiac, gluten intolerance, allergies, and dairy sensitivities. Ensuring that desserts are visually stunning and sensorially pleasing is key to aligning with the resort’s refined aesthetic and guest expectations.
Quality, safety, and compliance are fundamental. The Pastry Sous Chef maintains rigorous food safety standards, including sanitation and HACCP compliance, proper ingredient handling, and workspace inspections. Maintaining Certified Food Protection Manager Certification is also required.
Being a vital collaborator, this position works closely with Banquets, Restaurants, Purchasing, and Stewarding teams to ensure flawless event execution and daily service. Effective communication, precise interpretation of event orders (BEOs), and dedication to Omni PGA’s team-oriented culture further define the responsibilities of this important role.

- Minimum 6 years' experience in a 5-star hotel or luxury fine-dining environment
- Diploma from an accredited culinary pastry school
- Certified Food Protection Manager Certification
- Ability to lift up to 50 lbs, push/pull up to 75 lbs, and stand for extended periods
- Flexibility to work early mornings, evenings, weekends, holidays, and event-driven schedules
- Strong understanding of modern dietary needs and allergen-safe recipe development
- Ability to stand for extended periods and lift/push/pull required weights
- Comfortable working in hot, cold, and fast-paced kitchen environments
- Ability to work in a dynamic luxury resort environment and meet the demands of major events and seasonal activities

Job Duties

- Ensure readiness for next-day production through proactive communication with storerooms and stewarding
