We are currently seeking a dedicated and skilled Sous Chef to join our culinary team. The Sous Chef will work alongside the Executive Chef to efficiently manage daily kitchen operations, ensuring that the highest standards of food quality, safety, and presentation are met. The Sous Chef plays a crucial role in maintaining the operational flow and success of the kitchen. Responsibilities include overseeing kitchen staff, assisting with menu development and preparation, controlling food costs, managing inventory, and ensuring all dishes meet the club’s culinary standards. The ideal candidate will have strong leadership skills, a passion for culinary excellence, and the ability to foster teamwork in a high-volume kitchen environment. In addition to day-to-day kitchen management, the Sous Chef is expected to assume full charge of the kitchen in the Executive Chef’s absence, handle procurement and storage of food supplies, and coordinate kitchen sanitation and safety practices.

This role also includes mentoring and training kitchen staff, supporting staff meetings, and actively participating in operational discussions aimed at improving efficiency and quality. The Sous Chef should be proactive in identifying areas for operational enhancement and personnel development, contributing creative ideas to support the Executive Chef’s vision. Candidates must have experience with standard kitchen equipment, food safety certifications such as ServSafe, and a comprehensive understanding of food handling best practices. Physical stamina is required, as the kitchen environment entails standing for extended periods, lifting heavy items, and working under fast-paced, sometimes stressful conditions.

Job Requirements

  • High school diploma or equivalent
  • previous experience in a similar kitchen supervisory role
  • food safety certification such as ServSafe
  • ability to stand for long periods and perform physical tasks including lifting up to 50 pounds
  • ability to work in hot, humid and noisy kitchen environments
  • excellent communication and leadership skills
  • proactive attitude towards training and operational improvements

Job Qualifications

  • Experience working with all standard kitchen equipment
  • knowledge of food handling and preparation principles and procedures
  • ability to supervise kitchen food production employees effectively
  • certification in food safety such as ServSafe
  • preferred certification from the American Culinary Federation or similar hospitality association
  • skilled in occupational hazards and safety precautions
  • ability to perform required role during emergency situations

Job Duties

  • Prepares or directly supervises kitchen staff responsible for daily preparation of soups, sauces and specials to ensure adherence to club’s standard recipes
  • assists the Executive Chef with monthly inventories, pricing, cost controls, requisitioning and issuing for food production
  • conducts daily raw cost tracking counts to ensure all items are accounted for
  • checks in orders and ensures product arrival and quality
  • assumes complete charge of the kitchen in Executive Chef’s absence
  • assists with supervision and training of employees, sanitation and safety, menu planning and related production activities
  • maintains standards of quality, cost, presentation and flavor of foods
  • ensures proper staffing for maximum productivity and quality
  • makes recommendations for maintenance, repair and upkeep of kitchen and equipment
  • works personally in any station as assigned
  • assists with administration of kitchen personnel benefits
  • consults with dining service personnel during daily line-ups
  • maintains security of kitchen including equipment and inventories
  • assists in food procurement, delivery, storage and issuing
  • expedites food orders during peak service hours
  • supervises, trains and evaluates kitchen personnel
  • coordinates buffet presentations including setup and breakdown
  • checks mise en place and inspects food presentation
  • reports member and guest complaints and assists in resolving them
  • submits ideas for future goals, operational improvements and personnel management
  • follows proper sanitation and hygiene practices
  • attends staff meetings
  • performs other tasks assigned by the Executive Chef
