Job Requirements
- High school diploma or equivalent
- Proven experience in culinary or kitchen supervision roles
- Food safety certification
- Ability to stand for long periods and perform physically demanding tasks
- Ability to lift up to 50 pounds
- Strong leadership and communication skills
- Availability to work full-time
Job Qualifications
- Food safety certification
- Certification from American Culinary Federation or other hospitality association
- Familiarity with standard kitchen equipment
- Knowledge of food handling and preparation principles
- Ability to supervise kitchen staff effectively
- Skilled in safety practices and recognizing hazards
- Knowledge of emergency role performance
Job Duties
- Prepares or directly supervises kitchen staff responsible for daily preparation of soups, sauces and specials
- Assists the Executive Chef with monthly inventories, pricing, cost controls, requisitioning and issuing for food production
- Conducts daily raw cost tracking counts
- Checks in orders and ensures product quality
- Assumes full charge of the kitchen in absence of Executive Chef
- Assists with supervision and training of employees, sanitation and safety, menu planning and production activities
- Maintains standards of quality, cost, presentation and flavor of foods
- Ensures proper staffing for maximum productivity and quality
- Recommends maintenance and repair of kitchen and equipment
- Works in any station assigned by Executive Chef
- Assists with administration of kitchen personnel benefits
- Consults with dining service personnel
- Maintains security of kitchen including inventories
- Assists in food procurement, delivery, storage and issuing
- Expedites food orders during peak service hours
- Supervises, trains and evaluates kitchen personnel
- Coordinates buffet presentations, including setup and breakdown
- Checks mise en place before service and inspects food presentation
- Reports all member and guest complaints and assists in resolution
- Submits ideas for operational improvements
- Follows sanitation and personal hygiene practices
- Attends staff meetings
- Performs other tasks assigned by Executive Chef
