The role of Sous Chef at Dram Yard is a pivotal position within this dynamic culinary environment. The ideal candidate will be skilled and meticulous, responsible for managing daily kitchen operations and supporting the Chef de Cuisine in running a fiscally responsible kitchen while upholding rigorous service standards. This position demands a hands-on leader who can manage the back-of-house team effectively, ensuring quality and consistency in food preparation and presentation meet the high standards the restaurant is known for. The Sous Chef is expected to take charge during the absence of the Chef de Cuisine, overseeing inventory, stock ordering, and the overall kitchen's productivity. Essential duties include maintaining compliance with food labeling, storage, and temperature controls, supervising the kitchen cleaning schedule, and ensuring staff use prep lists correctly while following the "First In First Out" method. The role also involves creating daily communication logs, developing a passionate and efficient kitchen brigade through continuous education and encouragement, and collaborating closely with restaurant and hotel teams to deliver impeccable guest experiences.

Job Requirements
- Minimum of 3-5 years experience in a similar position
- ability to stand, walk, bend, and lift up to 50 lbs
- flexible schedule including mornings, nights, weekends, and holidays

Job Duties
- Supporting the Chef de Cuisine by ensuring labor and food cost targets are met
- running an efficient, productive, and professional kitchen on a day-to-day basis when Chef de Cuisine is not present
- creating a daily log to communicate effectively with management and team members
- developing a passionate and effective kitchen team through hands-on education and positive encouragement
- ensuring quality and consistency of all dishes prepared and served
- supervising food preparation and presentation according to restaurant standards
- working collaboratively with all restaurant and hotel teams to ensure productivity and guest satisfaction
