Job Requirements

  • Associate degree or culinary arts certification preferred
  • 1-3 years experience as a chef or sous chef
  • 7 years experience as a cook
  • Supervisory experience preferred
  • Ability to work fast paced environment
  • Strong leadership and training ability
  • Excellent time management and communication skills
  • ServSafe certification preferred
  • Ability to lift over 25 pounds
  • Ability to stand and move for long shifts
  • Ability to comply with union agreements
  • Must complete company required trainings
  • Ability to work full time
  • Willingness to travel up to 25 percent
  • Ability to oversee up to 40 employees

Job Qualifications

  • Associates degree in culinary arts or culinary arts certification preferred
  • Minimum 1-3 years experience as a chef or sous chef required
  • Minimum 7 years experience as a cook required
  • Previous supervisory experience in high-volume manufacturing, food production, restaurant or catering preferred
  • In-flight catering or high-volume food service experience preferred
  • Ability to cook meals according to detailed specifications
  • Ability to work in a fast paced, deadline driven environment
  • Strong and effective leadership skills
  • Experience with labor relations is a plus
  • Ability to train others
  • Ability to give daily feedback to employees
  • Excellent time management skills
  • Strong organizational, analytical, communication, and leadership skills
  • Innovative with ability to improve work environment and performance
  • Experience with menu design is a plus
  • Basic computer skills required
  • Working knowledge of Microsoft Office preferred
  • ServSafe certification preferred
  • Excellent written and oral communication skills
  • Bilingual in Spanish is a plus

Job Duties

  • Ensure food specifications and labor objectives meet company and customer requirements
  • Supervise department for quality and quantity, ensure items are produced and dated according to specification and coding systems including FDA, USDA, and HAACP compliance
  • Manage attendance records, prepare paperwork, set up shifts, and assign employees to sections for schedule optimization
  • Order raw materials from storeroom and produce extra meals as needed
  • Prepare daily production sheets and assign tasks based on passenger counts
  • Oversee food items post-requisition, provide training and recurrent training on preparation procedures
  • Maintain safety procedures and cleanliness to ensure quality products
  • Manage daily production of hot and cold kitchens for quality and consistency
  • Ensure compliance with company wage and hour policies including employee breaks and processes
  • Train and monitor employees for productivity and cost control
  • Monitor daily manpower planning and scheduling
  • Drive employee retention and reduce turnover
  • Coach, counsel, and prepare corrective actions in compliance with union agreements
  • Review employee cost centers, job titles, and pay based on wage scales and seniority
  • Complete all required company trainings including ServSafe
  • Comply with company policies, procedures, and processes
