Job Requirements
- High school diploma or equivalent
- Minimum five years of culinary or kitchen management experience
- Ability to manage kitchen staff and operations effectively
- Knowledge of federal, state, and corporate food safety and sanitation standards
- Strong leadership and organizational skills
- Ability to prepare and manage budgets and control costs
- Excellent communication and interpersonal skills
- Flexibility to work varied shifts including weekends and holidays
- Commitment to maintaining a safe and healthy work environment
- Availability to assume Executive Chef duties when needed
Job Qualifications
- Two plus years of post-high school education, culinary education is desirable
- Five plus years of employment in a related position
- Hotel experience preferred
- Advanced knowledge of food profession principles and practices including management of associates and complex food and beverage management problems
- Knowledge of hotel operations including marketing, security and safety programs, personnel and labor relations, business plan preparation, maintenance, budget forecasting, quality assurance, hospitality law, and long-range planning
- Leadership skills to motivate, develop staff and accomplish goals
- Ability to work effectively under time constraints and deadlines
- Effective verbal and written communication skills with ability to adapt to different audiences
Job Duties
- Manage the daily production, preparation, and presentation of all food for the hotel's restaurant(s) and room service to ensure quality and consistency
- Manage human resources in kitchen production and preparation areas including hiring, training, scheduling, performance reviews, and discipline
- Schedule and oversee maintenance and sanitation of kitchen and equipment to comply with health and safety standards
- Monitor, analyze, and control labor and food costs while maintaining or improving quality
- Promote accident prevention programs to minimize liabilities
- Assist the Executive Chef in menu creation, costing, and implementation of seasonal and special menus
- Assume responsibilities of the Executive Chef in their absence
- Comply with attendance rules and be available for regular work
- Perform other job-related duties as assigned
