Job Requirements
- California Food Handler's Card
- minimum 2 years of sous chef experience or equivalent culinary education
- ability to work at least 50 hours per week including nights, weekends, and holidays
- physical ability to stand, walk, lift up to 50 pounds and perform kitchen duties
- strong teamwork and communication skills
- willingness to work on-site at San Francisco location
Job Qualifications
- Minimum 2 years experience as a Sous Chef or relevant culinary education or experience
- progressive experience in fine dining food production
- strong knowledge of back of house systems including ordering and inventory
- thorough understanding of local, state, and federal food sanitation regulations
- awareness of current and emerging food trends
- excellent communication skills
- ability to meet deadlines
Job Duties
- Assist in managing the main kitchen with production and execution
- train the culinary and front-of-house staff
- manage food and labor costs daily
- develop recipes and portion control specifications
- participate in seasonal menu planning and wine dinners
- conduct daily inspections of all food prepared for dinner service
- ensure cleanliness and sanitation procedures are followed
- coordinate training activities with kitchen and support staff
- maintain specialized kitchen equipment and uphold cleaning protocols
- build and maintain relationships with vendors
- assist Executive Chef with food and beverage related issues
- support problem solving and execution challenges
- manage employees within Niku
- collaborate with front-of-house management teams
