Job Requirements

  • California Food Handler's Card
  • minimum 2 years of sous chef experience or equivalent culinary education
  • ability to work at least 50 hours per week including nights, weekends, and holidays
  • physical ability to stand, walk, lift up to 50 pounds and perform kitchen duties
  • strong teamwork and communication skills
  • willingness to work on-site at San Francisco location

Job Qualifications

  • Minimum 2 years experience as a Sous Chef or relevant culinary education or experience
  • progressive experience in fine dining food production
  • strong knowledge of back of house systems including ordering and inventory
  • thorough understanding of local, state, and federal food sanitation regulations
  • awareness of current and emerging food trends
  • excellent communication skills
  • ability to meet deadlines

Job Duties

  • Assist in managing the main kitchen with production and execution
  • train the culinary and front-of-house staff
  • manage food and labor costs daily
  • develop recipes and portion control specifications
  • participate in seasonal menu planning and wine dinners
  • conduct daily inspections of all food prepared for dinner service
  • ensure cleanliness and sanitation procedures are followed
  • coordinate training activities with kitchen and support staff
  • maintain specialized kitchen equipment and uphold cleaning protocols
  • build and maintain relationships with vendors
  • assist Executive Chef with food and beverage related issues
  • support problem solving and execution challenges
  • manage employees within Niku
  • collaborate with front-of-house management teams
