Job Requirements

  • High school diploma or equivalent
  • Minimum 3 years experience in a similar sous chef role
  • Serve-Safe certification required
  • Food Manager’s Certificate required
  • Ability to work flexible hours including nights, weekends, and holidays
  • Strong leadership and communication skills
  • Ability to stand for long periods and perform physically demanding tasks
  • Knowledge of food safety and sanitation practices
  • Ability to multitask and prioritize duties effectively

Job Qualifications

  • Culinary degree or related certification preferred
  • Proven experience as a sous chef or senior culinary role in high-volume restaurants
  • Strong leadership and team management skills
  • In-depth knowledge of kitchen operations and food safety standards
  • Excellent communication and organizational skills
  • Ability to manage food costs and inventory efficiently
  • Serve-Safe certification
  • Food Manager’s Certificate
  • Ability to train and mentor team members effectively
  • Proficient in handling stressful and fast-paced environments
  • Familiarity with scheduling and labor management tools

Job Duties

  • Address guest needs promptly, treat every situation with a sense of urgency
  • Prioritize guest care above all else and ensure presence in the right place at the right time
  • Prepare and expedite food efficiently to meet ticket time without compromising quality
  • Ensure only 100% quality food is served, show courage to reject anything less
  • Actively seek guest feedback to enhance menu quality, respond swiftly
  • Follow all systems to ensure consistent quality control and complete accurate prep sheets daily
  • Possess strong food knowledge, train team on appearance, portioning, presentation, and recipe adherence
  • Exhibit thorough knowledge of kitchen operations and anticipate prep needs
  • Ensure proper staffing levels and maintain team productivity
  • Maintain uncompromising cleanliness, proper food handling, and a safe environment
  • Provide clear communication and set expectations
  • Mentor and develop team members
  • Conduct effective BOH pre-shifts daily and attend FOH pre-shifts
  • Manage monthly food cost and weekly labor goals
  • Execute and enhance training systems for all BOH employees
  • Maintain composure under pressure and demonstrate professionalism
  • Sign off on all BOH training with Executive Chef
  • Oversee daily prep sheets and business trends
  • Manage maintenance and organization of all coolers
  • Complete daily line checks
  • Conduct station training and daily follow-ups
  • Handle purchasing, receiving, and storing of products
  • Perform weekly inventory
  • Manage daily boat features and oyster selections
  • Follow and oversee established support center systems
