The Sous Chef position at Morrison Living located in Vista West Madison, Madison, WI, is a full-time role with a pay rate of $22.00 per hour. This position requires a passion for hospitality and culinary arts, particularly in batch cooking, and plays a critical role in supporting the Executive Chef. The Sous Chef assists in the preparation and cooking of food, ensures adherence to food safety standards, and coordinates kitchen activities including supervising food-service associates. The role demands flexibility in working hours, including rotating weekends and holidays, to meet the operational needs of the facility. Job Requirements

  • prior batch cooking experience
  • ability to work full time, including rotating weekends and holidays
  • knowledge of corporate, state, and federal food safety regulations
  • capability to supervise and manage kitchen staff
  • good communication and organizational skills
  • ability to stand for extended periods and handle kitchen duties
  • high school diploma or equivalent

Job Duties

  • help the Executive Chef prepare and cook foods
  • coordinate activities of cooks and other food-service associates
  • assume responsibility for kitchen and food-service associates in the absence of Executive Chef
  • cook and prepare food following approved recipes and production standards
  • supervise hourly food service associates including interviewing, scheduling, payroll, training, counseling, participating in reviews and recommending disciplinary action
  • store food in designated areas following all corporate, state and federal food safety and sanitation procedures
  • ensure proper food handling, presentation, portion control and maintenance of appropriate serving temperatures
  • maintain sanitation of equipment, supplies and utensils
  • clean workstation thoroughly before leaving area
  • keep display equipment clean and free of debris during meal service
  • interact with customers to resolve complaints in a friendly, service-oriented manner
  • relay relevant information directly to supervisor
  • demonstrate complete understanding of daily menu items and accurately explain them to associates and customers
  • keep up with peak production and service hours
  • monitor inventory and deliveries of product and supplies
  • track product production, consumption and waste
  • inform supervisor when supplies or products are low
  • perform other duties as assigned
