We are currently hiring for a full-time Sous Chef position at Wichita State, located at 1845 Fairmount Street, Wichita, KS 67260. This role is vital to supporting our culinary operations and ensuring the highest standards of food quality and kitchen management. As a Sous Chef, you will work directly with the Executive Chef to prepare and cook food, manage kitchen staff, and maintain optimal kitchen operations. This position offers a competitive pay range of $22.00 to $27.00 per hour, with a full-time schedule that may vary in days and hours based on kitchen needs. In this role, you will be responsible for assisting in the preparation and cooking of meals while adhering to approved recipes and production standards. You will supervise hourly food service associates, handle scheduling, training, and performance management activities including counseling and disciplinary actions when necessary. Food safety and sanitation are key priorities as you will ensure compliance with all corporate, state, and federal regulations regarding food storage, handling, and workstation cleanliness.

The Sous Chef also plays a critical role in quality control by monitoring food presentation, portion sizes, and serving temperatures, ensuring that every meal served meets our high standards. Your interaction with customers to resolve complaints professionally will contribute to the overall positive dining experience and reinforce the high level of service Compass Group is known for. Inventory management is another important aspect of the role—you will track supplies, product usage, and waste, communicating needs to supervisors to maintain efficient kitchen operations.

Job Duties

  • Help Executive Chef prepare and cook foods
  • Coordinate activities of cooks and other food-service associates
  • Assume responsibility for kitchen and food-service associates in the absence of Executive Chef
  • Cook and prepare food following approved recipes and production standards
  • Ensure all deadlines are met based on production orders
  • Supervise hourly food service associates including interviewing, scheduling, payroll, training, counseling, participating in reviews and recommending disciplinary action
  • Store food in designated areas following all corporate, state and federal food safety and sanitation procedures
  • Ensure proper food handling, presentation, portion control and maintenance of appropriate serving temperatures
  • Maintain sanitation of equipment, supplies and utensils
  • Clean workstation thoroughly before leaving area
  • Keep display equipment clean and free of debris during meal service to comply with all sanitation, safety, production and merchandising requirements
  • Interact with customers to resolve complaints in a friendly, service-oriented manner
  • Relay relevant information directly to supervisor
  • Demonstrate complete understanding of daily menu items and accurately explain them to associates and customers
  • Keep up with peak production and service hours
  • Monitor inventory and deliveries of product and supplies
  • Track product production, consumption and waste
  • Inform supervisor when supplies or product are low
  • Perform other duties as assigned
