The Sous Chef role within Wolf River Hospitality Group is a crucial leadership position responsible for coordinating the kitchen staff’s efforts to ensure high-quality and timely food service. This full-time role involves managing food preparation in adherence to established recipes and production procedures. The Sous Chef plays an essential part in controlling supplies and equipment usage to minimize waste, supporting sustainability efforts. This role demands strong culinary knowledge, including awareness of the latest culinary trends and the ability to provide input and creativity in developing seasonal dishes and daily specials. The Sous Chef takes ownership of training kitchen staff on food preparation standards and safety protocols while maintaining the proper storage of food to uphold safety and quality standards. Additionally, this position oversees ordering food supplies and kitchen equipment, monitors kitchen maintenance needs, and performs quality and temperature checks prior to service. Candidates for this role should have prior leadership experience in food service, be capable of thriving in a fast-paced environment, and hold or be able to obtain ServSafe certification. Job Qualifications
- Prior leadership experience in a related food service position
- Understanding of kitchen sanitation and safety regulations
- Ability to lead a team in a fast-paced environment
- ServSafe certification or ability to obtain certification
- Certification from a culinary school a plus
Job Duties
- Directs and participates in preparation of food served using established procedures
- Implements company recipe guidelines through recipe guides, plate presentation and audits
- Coordinates food preparation so that excellence, quality, temperature and appearance of food are preserved
- Has knowledge of culinary trends
- Provides input in developing and refining recipes for seasonal dishes and daily specials
- Takes ownership for training kitchen staff on standards and kitchen safety
- Ensures food is stored properly and safely
- Orders food supplies and kitchen equipment as needed
- Reports necessary equipment repair and maintenance
- Completes food quality and temperature checks before service
