As the operator of DUKE University’s catering services, Proof of the Pudding is seeking a seasoned Sous Chef to play a critical role in leading their culinary program across multiple elite sporting venues including football, basketball, baseball, and lacrosse. This full-time, hourly position offers a competitive salary range of $22.00 to $28.00 per hour, reflecting the expertise and leadership required for this role. The Sous Chef will serve as a vital member of the culinary team, responsible for overseeing all culinary aspects in the kitchen, ensuring operational efficiency during events, and supporting the Executive Chef with scheduling, purchasing, and invoice management.

With responsibilities extending from menu planning and execution to training and staff management, the Sous Chef will work closely with the Executive Chef to uphold the company’s standards of innovation and quality. This position also requires active participation in various events to guarantee seamless culinary operations across DUKE University’s distinguished venues, including managing premium club areas and student training tables.

In addition to operational oversight, the Sous Chef will be instrumental in developing new menu items that exemplify the company’s culinary excellence while managing food purchasing and inventory effectively. Job Requirements

  • Must have 4+ years of leadership experience in catering or events
  • Culinary arts or hospitality management degree or equivalent training
  • Proficiency with Microsoft Office and purchase management
  • Willingness to live near or relocate to Durham, NC
  • Ability to produce consistent product in high volume settings
  • Excellent communication and leadership skills
  • Capacity to perform physical tasks including lifting up to 30 lbs
  • Availability to attend events as required
  • Adherence to safety, sanitation, and legal standards

Job Qualifications

  • 4+ years of leadership experience in high volume catering or events
  • Degree or training in culinary arts, hospitality management, or equivalent
  • Knowledge of Microsoft Office, email communications, and purchasing procedures

Job Duties

  • Assist with the planning and execution of event menus
  • Oversee football program including 22 suites and 3 premium club areas at Wallace Wade Stadium
  • Manage basketball program with 1 premium club area at Cameron Indoor Stadium
  • Coordinate student training table operations Sunday-Thursday with two meal periods daily
  • Support catering program for diverse events from weddings to bar mitzvahs
  • Maintain safe, secure, and healthy kitchen environment by enforcing sanitation standards and legal compliance
  • Create and sustain positive morale within the kitchen and culinary team
  • Schedule staff and food production aligning with business demands and company policies
  • Assist with hiring, onboarding, and training of culinary staff
  • Support Executive Chef with event logistics planning and execution
  • Manage purchasing and inventory for culinary operations
  • Develop and communicate creative, innovative menu items
  • Lead hiring, training, accountability, and scheduling of culinary staff
  • Coach culinary department to cultivate a strong team
  • Perform other related duties as needed
