The role of Banquet Sous Chef at Grand Hyatt DFW is a vital leadership position within the culinary department, directly supporting the Executive Sous Chef and culinary leadership team. This role specializes in banquet and catering culinary operations, ensuring the highest standards in food quality, presentation, consistency, sanitation, and efficiency. The Banquet Sous Chef is responsible for overseeing food production for a variety of events such as meetings, conferences, weddings, and other special functions—a position demanding exceptional culinary skills and leadership in a fast-paced, luxury environment.

This position involves hands-on culinary leadership, with responsibilities that include supervising banquet kitchen team members through every stage of preparation, production, plating, and event execution. Ensuring strict adherence to Hyatt’s recipes, portion controls, and quality standards is essential to this role. Additionally, the successful candidate will work closely with banquet operations, event teams, and other hotel departments to guarantee seamless event coordination and a memorable guest experience.

Beyond the culinary and operational duties, the Banquet Sous Chef partners with the team to manage food safety, sanitation, inventory control, and cost management, striving to minimize waste and optimize product utilization. Job Requirements

  • Previous culinary leadership experience required, preferably as a Sous Chef or Jr. Sous Chef in a hotel, banquet, catering, or high-volume kitchen environment
  • Strong banquet production experience preferred
  • Culinary degree or formal culinary training preferred
  • Proven knowledge of food preparation techniques, kitchen operations, sanitation, and safety practices
  • Ability to lead and motivate a team in a fast-paced environment while maintaining high quality standards
  • Strong organizational skills and ability to manage multiple events and production timelines simultaneously
  • Understanding of food cost controls, product utilization, and labor efficiency
  • Excellent communication and teamwork skills
  • Flexible availability, including early mornings, evenings, weekends, and holidays
  • Experience in luxury hotel or convention-style banquet operations
  • Strong background in plated service, buffet execution, and large-scale event production
  • Ability to adapt quickly to changing event needs and guest expectations
  • Passion for culinary excellence and colleague development
  • Ability to stand for extended periods during shifts
  • Ability to lift, carry, push, and pull moderate to heavy items
  • Ability to work safely in a fast-paced kitchen environment with exposure to heat, cold, and sharp equipment

Job Duties

  • Support senior leadership by developing and assuming basic management responsibilities
  • Assume the role of liaison between all departments within the culinary division and all other hotel departments
  • Supervise the preparation and cooking of various food items
  • Develop and implement creative menu items that adhere to Hyatt brand standards
  • Plan, coordinate & implement special events and holiday functions
  • Manage hourly kitchen employees through scheduling, payroll, training, coaching, evaluating and hiring
  • Lead and coach the team towards achieving exceptional guest service and employee satisfaction results
