Job Requirements
- must obtain and maintain all licenses and certifications per federal, state, and gaming regulations
- must successfully pass background check
- must successfully pass drug screening
- must be eighteen years of age
- flexibility to work varying shifts
- ability to present a professional appearance and enthusiastic attitude
- ability to communicate clearly and concisely
- capability to deliver high service standards
- proficiency with kitchen tools
- ability to monitor and control cash flow and security
- adherence to safety and sanitation standards
Job Qualifications
- minimum eight years progressive food preparation experience or culinary arts degree or accredited apprenticeship with four years progressive experience and one year supervisory experience
- knowledge of federal, state, and local laws and regulations relevant to food service
- understanding of safety and sanitation practices for food and beverage
- expertise in food preparation including stocks, soups, sauces, and various meats
- demonstrated organizational skills and budgeting experience
- ability to communicate effectively both orally and in writing
- experience in mentoring and motivating team members
Job Duties
- create an atmosphere that induces guests to choose Hard Rock Hotel and Casino Sacramento at Fire Mountain for gaming entertainment
- hire, train, motivate, evaluate and supervise staff to ensure team members have adequate guidance and resources
- establish and maintain training and development procedures to ensure superior guest service standards
- maintain department objectives, standards, guidelines and budget for proper management
- monitor food purchasing, staffing, food preparation and inventory to control costs and waste
- evaluate food preparation by observing cooking techniques and tasting results
- assist in developing menu changes for variety and quality
