Job Requirements

  • Three years formal culinary training
  • minimum three years experience including two years as Chef de Partie
  • ship experience required
  • ability to lead a culinary team
  • natural initiative without regular supervision
  • demonstrated leadership abilities
  • able to work under tight timeframes and budget goals
  • proficiency in all kitchen stations
  • knowledge in safe food handling, HACCP, USPH
  • ability to follow standardized recipes and recipe conversion
  • strong communication skills
  • good time management and organizational skills
  • basic computer knowledge
  • valid passport and C1/D Seaman's visa
  • completed pre-employment medical
  • criminal background check
  • approved work shoes
  • willingness to live and work onboard ship
  • willingness to fulfill safety and emergency responsibilities
  • acceptance of shared living quarters and multicultural work environment
  • drug-free workplace compliance

Job Qualifications

  • Three years formal culinary training from accredited school or recognized apprenticeship
  • minimum three years experience including two years as Chef de Partie in high volume kitchens
  • ship experience required
  • ability to lead a culinary team
  • demonstrated initiative and leadership skills
  • proficiency in all kitchen stations
  • knowledge of safe food handling, HACCP, USPH
  • ability to follow standardized recipes and perform recipe conversion
  • strong written and verbal communication skills
  • good time management and organizational skills
  • basic computer knowledge

Job Duties

  • Complete proper menu preparation for all allergy and special dietary needs
  • ensure training and preparation follow company guidelines
  • exceed Disney Cruise Line and Vessel Sanitation Program requirements
  • prepare and lead culinary team through internal inspections
  • implement company recipe guidelines through recipe booklets and audits
  • provide feedback on recipe formulation
  • guide communication between galley crew and management
  • maintain food quality standards during storage, production, and service
  • oversee opening and closing procedures for assigned kitchens
  • monitor handling and maintenance of operating equipment
  • organize daily menu presentations and food tasting
  • provide performance feedback to Chef de Cuisine
