Graton Resort and Casino is a premier entertainment destination nestled in the heart of California's renowned wine country, Sonoma County. This luxury resort and casino boast a rich tradition of providing guests with exceptional hospitality experiences, blending world-class gaming, dining, and entertainment under one roof. Currently, Graton Resort and Casino's Food and Beverage Department is expanding, seeking highly motivated culinary professionals who are passionate about redefining hospitality and creating transcendent epicurean experiences. The resort is hiring for the position of Team Dining Room Sous Chef, a critical role that serves as the second-in-command in the kitchen hierarchy. As the Team Dining Room Sous Chef, you will work closely with the Room Chef to ensure smooth kitchen operations while maintaining the highest standards of health, safety, and sanitation. Your responsibilities will include recruiting new team members, responding effectively to guest needs, and collaborating on the development of seasonal menus that reflect the flavors and products of Sonoma County and beyond. This role demands a hands-on culinary expert comfortable with various food preparation techniques, including butchering, baking, sautéing, grilling, and cold food production, suited for a high-volume, three-meal service environment.
Beyond the kitchen, this position requires leadership qualities: managing inventories, maintaining quality control of kitchen products and equipment, overseeing kitchen sanitation, and enforcing company culture and service standards. You will be responsible for training new team members, coaching underperformers, conducting team communication huddles, and handling scheduling to ensure efficient staffing levels. The Sous Chef will also be instrumental in budget planning and cost control to optimize kitchen profitability.
Candidates must be able to work a flexible schedule that includes weekends, holidays, and various shifts. Moreover, applicants must be at least 21 years old and meet specific licensing and certification requirements, including obtaining a gaming license from the Graton Gaming Commission and a California Food Handler Certification.

Job Requirements
- Ability to communicate effectively with guests, team members and management in both written and verbal form
- High school diploma or equivalent
- Three years culinary experience in a related field preferred
- Must be at least 21 years of age
- Ability to work hands-on in kitchen environments including fine dining and high volume production
- Ability to handle a flexible schedule and work weekends, holidays and all shifts
- Ability to delegate, empower and evaluate team members
- Ability to work in a fast-paced environment
- Must be able to obtain a gaming license from the Graton Gaming Commission
- Must possess or obtain a California Food Handler Certification
