The position of Concessions Sous Chef at the Moda Center offers a unique opportunity to be an integral part of a dynamic team dedicated to culinary excellence in a fast-paced, high-profile sports and entertainment environment. This role is vital in supporting the overall success of the food program by overseeing culinary functions and assisting in comprehensive planning, ordering, inventory management, and food preparation. As a Sous Chef, you will contribute directly to the food program's success by ensuring all operations meet Levy's high standards for quality, freshness, presentation, and safety according to both company policies and Health Department regulations. The role includes motivating and developing back-of-house culinary staff, through effective training and leadership, to execute food preparation and cooking with precision and enthusiasm. Your responsibilities will also extend to menu planning, cost control measures, and participating in the rollout of new culinary programs in collaboration with marketing and culinary teams. This position demands a blend of culinary expertise, operational oversight, and excellent interpersonal skills to deliver an outstanding customer experience in a vibrant entertainment venue.

Job Requirements

  • Three years of culinary experience including at least one year in a management role
  • Demonstrated ability to lead and manage culinary teams
  • Strong understanding of food safety, sanitation, and cost control measures
  • ServSafe certification
  • Proficiency with computers and MS Office applications including Excel
  • Effective communication and interpersonal skills
  • Ability to work in a fast-paced, team-oriented environment

Job Qualifications

  • Three years of related culinary experience including one year at the management level
  • Experience in restaurants, hotels, corporate dining, education, military, health care, or related food service operations
  • Knowledge of food and industry trends focusing on quality, production, sanitation, safety, food cost controls, and presentation
  • Ability to set up and distribute production sheets
  • Strong supervisory, leadership, training, management, and coaching skills
  • ServSafe certification required
  • Computer skills and knowledge of MS Office products including Excel

Job Duties

  • Assist in coordinating and participating in the preparation and cooking of various food items
  • Assist with planning and creating menus
  • Roll out new culinary programs in conjunction with the marketing and culinary team
  • Assist with managing cost controls and controlling expenditure
  • Motivate, train, and develop back of house associates
  • Ensure adherence to health department regulations and company standards
  • Perform other duties as assigned
