The role of Sous Chef at Hyatt is pivotal to maintaining the high standards the brand is known for in its culinary operations. This position involves managing a specific department within the culinary division, working closely with the Executive Chef and Executive Sous Chef to implement and uphold quality standards. The Sous Chef plays an essential leadership role, sometimes acting as the head of the culinary operation in the absence of senior culinary chefs.

Key responsibilities include overseeing the day-to-day functions of the culinary department, ensuring that the kitchen runs smoothly and efficiently to create an exceptional dining experience for guests. The Sous Chef provides mentorship and guidance to culinary team members, helping them to develop their skills and deliver superior service. This leadership extends to managing kitchen staff through scheduling, payroll, training, coaching, evaluating, and hiring processes. Furthermore, the Sous Chef ensures the preparation and cooking of food items adhere to Hyatt’s high-quality brand standards, often contributing innovative ideas to menu development.

Job Requirements

  • High school diploma or equivalent
  • Minimum of 3 years culinary experience in a professional kitchen
  • Experience in a supervisory or leadership role within the culinary field
  • Working knowledge of food safety regulations and kitchen equipment
  • Ability to work flexible hours including weekends and holidays
  • Strong organizational and time management skills
  • Physical ability to stand for long periods and lift heavy items
  • Commitment to uphold Hyatt's culture and values

Job Qualifications

  • Proven culinary experience in a professional kitchen
  • Previous leadership or management experience in culinary operations
  • Strong knowledge of food safety and sanitation standards
  • Ability to develop and implement creative menus

  • Culinary degree or equivalent professional training preferred

Job Duties

  • Support senior leadership by developing and assuming basic management responsibilities
  • Assume the role of liaison between all departments within the culinary division and all other hotel departments
  • Supervise the preparation and cooking of various food items
  • Develop and implement creative menu items that adhere to Hyatt brand standards
  • Plan, coordinate and implement special events and holiday functions
  • Manage hourly kitchen employees through scheduling, payroll, training, coaching, evaluating and hiring
  • May manage other key culinary leadership roles including supervisor and other less senior Sous Chefs
  • Lead and coach the team towards achieving exceptional guest service and employee satisfaction results
  • Monitor food production, ordering, cost, and quality and consistency on a daily basis
  • Ensure proper safety and sanitation of all kitchen facilities and equipment
