The Sous Chef position at Parkhurst Dining is a critical leadership role within the kitchen, responsible for assisting the culinary team in overseeing food production across all kitchen stations as well as supervising hourly team members. This role demands a passionate culinary professional capable of maintaining strict quality, quantity, and timeliness standards while adhering to rigorous sanitary guidelines as established by Parkhurst's food safety programs. The Sous Chef actively participates in upholding the Culinary Gold standards of Parkhurst Dining, ensuring excellence in food production, sanitation, employee management, safety, and quality control.

Beyond the essential food preparation duties, the Sous Chef works closely with the Executive Chef in all facets of kitchen operations including planning, budgeting, costing, inventory management, and employee relations. The role requires a proactive attitude towards managing daily activities and ensuring compliance with company standards. The Sous Chef is pivotal in checking that recipe standards are consistently followed to deliver high-quality products every time and coordinates schedules to keep the kitchen functioning smoothly. Additionally, the role involves preparing for and supporting special events and catering functions.

Job Duties

  • Manage and direct all culinary staff to ensure standards and quality are being followed by each staff member
  • Assist in purchasing all food, paper, cleaning, bakery, and safety items within budgeted levels
  • Assist with Executive Chef in menu development, organization and completion of production sheets and execution of new recipe standards
  • Assist Executive Chef in regular inspections of the entire unit for sanitation, cleanliness, temperatures and using checklists as a guide
  • Verify that recipe standards and consistency is constantly being used to ensure a quality product every time
  • Check schedule to ensure all employees are in place and ready to work
  • Review production sheet and daily menu plans
  • Review upcoming special events and catering needs and follow through with said tasks
  • Maintain an open line of communication with management, informing them of products and supplies needed
  • Follow the uniform dress code and maintain proper personal hygiene
  • Helps maintain inventory and proper ordering
  • Supervises staff and adheres to proper coaching and discipline methods
  • Assists with on boarding and training of new kitchen team members
