The role of Sous Chef at Compass Group is critical in supporting the Executive Chef by preparing and cooking foods according to approved recipes and production standards. Maintaining cleanliness of equipment, workstations, and dining service areas is also a key responsibility, aligned with corporate, state, and federal guidelines. The role also involves customer interaction to resolve complaints with a friendly and service-oriented approach, ensuring customer satisfaction. The Sous Chef must be knowledgeable about daily menu items to accurately explain options to both staff and customers and remain efficient during peak production and service hours. Inventory management is another critical aspect, requiring monitoring deliveries, tracking product use and waste, and informing supervisors when supplies run low. Job Duties
- Cooks and prepares food following approved recipes and production standards
- ensures all deadlines are met based on production orders
- supervises hourly food service associates including interviewing, scheduling, payroll, training, counseling, participating in reviews and recommending disciplinary action as appropriate
- stores food in designated areas following corporate, state and federal food safety and sanitation procedures
- ensures proper food handling, presentation, portion control and maintenance of appropriate serving temperatures
- maintains sanitation of equipment, supplies and utensils and cleans workstation thoroughly before leaving area
- interacts with customers to resolve complaints in a friendly, service-oriented manner and relays relevant information to supervisor
- demonstrates complete understanding of daily menu items and accurately explains them to associates and customers
- keeps up with peak production and service hours
- monitors inventory and deliveries of product and supplies, tracks product production, consumption and waste, informs supervisor when supplies or product are low
- performs other duties as assigned
