The role of Sous Chef is based at the Riverhouse on the Deschutes, a beautifully reimagined 221-room hotel located along the scenic riverbanks of Bend, Oregon. This property offers guests modern sophistication, world-class amenities, and access to the untamed natural wilderness of Central Oregon, making it a premier destination for outdoor pursuits and relaxation. The Sous Chef will play a pivotal role in the culinary team, functioning as a motivated and passionate hands-on leader in a high-volume professional kitchen. This position demands creativity in menu development that reflects seasonal availability and restaurant concepts, alongside strong leadership skills to support and mentor the culinary team both personally and professionally.

As a key part of the kitchen leadership, the Sous Chef will be instrumental in planning and executing daily food production while maintaining a safe, sanitary work environment compliant with all health regulations. They will help ensure the delivery of high-quality, profitable culinary products, actively engaging in cost control, budget management, and maintaining stringent food safety standards including the handling of allergen-sensitive meals. This role requires clear communication and collaboration with various departments, inspiring the culinary team by example and fostering a culture of respect and continuous improvement. The Sous Chef is expected to supervise kitchen operations, conduct daily inspections, and assist in creating, costing, and implementing seasonal and special menus. Candidates ideally possess at least five years of experience in a high-volume kitchen and culinary arts education, demonstrating solid knowledge of cooking techniques, food safety protocols, and staff management. Job Qualifications

  • College graduate in culinary arts
  • 5+ years experience in a high-volume professional kitchen
  • knowledge of basic and advanced cooking methods
  • strong familiarity with allergy information
  • knowledge of correct cooking temperatures for vegetables and proteins
  • certification as an active food handler
  • proficiency in reading and understanding BEOs, menus, and production schedules
  • strong organizational skills
  • ability to work independently
  • effective communication and leadership skills
  • energetic and motivated personality

Job Duties

  • Attract, retain, and motivate the best culinary talent
  • act in the absence of the executive chef to complete daily ordering using current par levels
  • perform any kitchen function including cooking and stewarding
  • conduct daily kitchen walk-throughs and recommend corrections and improvements
  • hold daily team meetings to communicate important information
  • attend weekly food and beverage and leadership meetings to represent the culinary team
  • manage departmental finances, analyze and control costs, and manage budgets for profitable operations
