The role of Sous Chef at Olio Italian is a pivotal leadership position within the back of house team, reporting directly to the Chef De Cuisine, General Manager, and Hospitality Manager. This position is salary-based and demands a dedicated culinary professional ready to contribute meaningfully to the restaurant's operational and culinary excellence. The Sous Chef will assist in menu development and is responsible for maintaining labor and food costs within budgetary guidelines. The position oversees the kitchen's daily administrative, operational, and culinary duties, ensuring the highest standards of sanitation, safety, and food quality are consistently met.

In this role, the Sous Chef will manage a team that includes line cooks, prep cooks, dishwashers, and BOH (back of house) supervisors, directly influencing the kitchen's success through leadership and hands-on involvement. Responsibilities include hiring, training, and retaining staff, overseeing recipe execution, managing food requisitions, and ensuring compliance with safety and sanitation regulations. The Sous Chef plays an essential role in staff development, fostering positive employee relations, and promoting a team-oriented environment that aligns with the restaurant's values.

The candidate will also be tasked with maintaining operational excellence by initiating repairs and maintenance when required and supervising the proper presentation and garnishing of all dishes served. Ideal candidates will have at least one year of kitchen management or sous chef experience, preferably in Italian or fine dining restaurants, with a strong background in homemade pasta and traditional sauces. The position requires flexibility to work evenings, weekends, and holidays, often encompassing 50-55 hours per week or more during peak times. Applicants should possess or be able to obtain a Serve Safe Manager Certification within 30 days of employment. Physical requirements include the ability to stand for long periods, lift up to 50 pounds, and work in a fast-paced, high-stress environment.

Job Requirements

  • Previous kitchen management and/or sous chef experience for a minimum of 1 year in Italian restaurant
  • Previous experience in fine dining restaurant
  • Ability to work evening hours, weekends, and holidays
  • Management work week of minimum 50-55 hours per week
  • Ability to work with minimal supervision
  • Must be at least 21 years of age
  • Serve Safe Manager Certification or ability to obtain one within 30 days
  • Be able to reach, bend, stoop and frequently lift up to 50 pounds
  • Be able to work in standing position for up to 10 hours
  • Ability to work in fast paced, high stress environment
  • Ability to work evenings, weekends, and holidays

Job Qualifications

  • Previous kitchen management and/or sous chef experience for a minimum of 1 year in Italian restaurant
  • Previous experience in fine dining restaurant

  • Preferred bachelor's degree in business or similar field
  • Serve Safe Manager Certification or ability to obtain one within 30 days

Job Duties

  • Hire, train, retain and develop BOH team under supervision of General Manager or Chef De Cuisine
  • Direct supervision of the line cooks, prep cooks, dishwashers and BOH supervisors
  • Oversight of all recipes and procedures held to standards
  • Ability to drive BOH operations to success
  • Spot checks food requisitions for various cooking stations and ensure execution to standards
  • Assures execution of staff training programs
  • Check freshness and quality of ingredients and ensure compliance with sanitation regulations and safety standards
