Job Description

Medinah Country Club is a prestigious and historic private club established in 1924, located on one of the most iconic properties in the country. Known for its tradition of excellence, Medinah Country Club provides its members with world-class amenities and services, including golf, dining, and special events. The club fosters a close-knit community atmosphere where staff are valued, and dedication to superior service is paramount. We are seeking a talented and driven Sous Chef to join our culinary team at The Fireside, the club's formal fine-dining restaurant. This full-time, year-round role offers a competitive salary in the range of $60,000 to $70,000 annually. The Sous Chef will report directly to the Chef De Cuisine and will be critical in ensuring that the kitchen operates smoothly and efficiently during service. The position requires availability to work evenings, weekends, and holidays as needed, reflecting the dynamic nature of the hospitality industry and the high standards expected at Medinah.

The Sous Chef role is designed for a culinary professional passionate about fine dining and elevated, member-focused service. The successful candidate will assist in managing daily kitchen operations, including executing refined and seasonal menus with precision and consistency. Job Requirements

  • Prior leadership experience preferred

  • Ability to lead in fast-paced environment
  • Culinary degree preferred or equivalent experience
  • Flexible availability including evenings, weekends, and holidays

Job Qualifications

  • 3-5+ years of progressive culinary experience (fine dining, upscale hotel, or private club environments preferred but not required)
  • Prior leadership experience as a Sous Chef or Senior Line Cook preferred but not required
  • Strong understanding of various cooking techniques
  • Experience with high-touch, member-focused service environments preferred but not required
  • Exceptional attention to detail, plating, and presentation
  • Ability to lead in a fast-paced, high-expectation setting environment
  • Culinary degree preferred but not required with equivalent work experience
  • Flexible availability, including evenings, weekends, and holidays as needed

Job Duties

  • Assist the Chef De Cuisine in overseeing daily kitchen operations for The Fireside restaurant
  • Execute and maintain refined, seasonally inspired menus with precision and consistency
  • Help to train and mentor line cooks and prep staff in the kitchen
  • Ensure proper execution of dinner service, tasting menus, wine dinners, and special events
  • Maintain high standards of food quality and presentation
  • Enforce sanitation, food safety, and cleanliness standards in compliance with local regulations
  • Manage inventory, ordering, and cost controls as needed
  • Assist in menu development, tastings, culinary innovations
  • All other duties as assigned by the Chef De Cuisine or Executive Chef
