The role available is a vital leadership position within the back of house team at True Food Kitchen. This position involves overseeing kitchen operations, ensuring that high standards of food quality and presentation are maintained during high volume service periods. The role demands technical expertise in culinary practices, precise line management, and facility maintenance, which are critical to delivering the exceptional dining experiences True Food Kitchen is known for. Responsibilities include opening and closing the kitchen line with thorough checks and compliance with EcoSure safety and sanitation standards, performing detailed facility walkthroughs, and addressing any deficiencies promptly. The role operates with close coordination between front of house and back of house teams to maintain a safe and efficient kitchen and dining environment.
This position is also crucial in talent acquisition and development for kitchen staff, involving hiring, scheduling, and reporting payroll hours in strict adherence to company standards and state regulations. It offers the opportunity to influence the restaurant’s financial health by partnering with executive chefs on managing profit and loss (P&L) statements, food cost management, labor control, inventory management, and overall restaurant performance. Continuous communication with front of house teams is essential to uphold the company's guidelines and ensure a seamless guest experience.

Job Requirements
- High school diploma or equivalent
- minimum 2 years experience as a chef in a high-volume full service restaurant
- basic understanding of business financials

- ability to work in a fast-paced environment

Job Duties
- Opens and closes the line, performs precise line checks and facility walks, EcoSure with proper documentation to adhere to company standards and addresses any deficiencies
- runs high volume service periods from the expo or wheel position to ensure food quality and presentation is up to TFK standards
- performs with BOH and FOH team, precise line checks and facility walks with proper follow up and documentation and participates with all EcoSure & Health inspections, ensuring a safe production environment
- responsible for the hiring and development of back of house employees
- managing their schedules and reporting payroll hours in compliance to company standards and state laws
- partners with EC on managing the P&L to assist in maximizing the profits through food cost management, labor, inventory control and performance of the restaurant
- consistent open communication with FOH team to ensure adherence of TFK guidelines
