The Sous Chef position at Vallarta Supermarkets' Rancho Cucamonga store offers a dynamic and essential role within a fast-paced supermarket environment. This role requires hands-on culinary leadership to support the Director of Culinary in managing daily high-volume food production across various departments such as prepared foods, hot foods, cold foods, Grab & Go, and catering. The Sous Chef ensures all meals and products comply with standardized recipes, portion control guidelines, and stringent food safety protocols governed by HACCP standards. With responsibilities spanning food production, quality control, inventory oversight, and staff supervision, the Sous Chef plays a pivotal role in maintaining operational efficiency and excellent food presentation which directly impacts customer satisfaction.

Job Requirements
- High school diploma or equivalent
- minimum 5 years of experience in high-volume food production
- ServSafe or Food Manager Certification or ability to obtain
- ability to lift, push, or carry up to 50 pounds
- flexible to work afternoons, evenings, weekends, and holidays
- able to stand, walk, bend, and reach frequently
- maintain regular attendance and punctuality
- willing to travel up to 10% including overnight stays
- comply with company safety policies and procedures
- maintain professional appearance and follow dress code
Job Qualifications
- High school diploma or equivalent
- minimum 5 years of experience in high-volume or quantity food production
- ServSafe and/or Food Manager Certification required or ability to obtain
- strong knowledge of high-volume food production and batch cooking
- ability to follow recipes, portion standards, and food safety requirements precisely
- proven ability to lead, coach, and motivate diverse teams
- strong time management and organizational skills
- basic mathematics and computer skills including data entry and production tracking
- must be able to speak, read, write, and understand English
Job Duties
- Assist the Director of Culinary in planning, organizing, and controlling daily kitchen operations to achieve production, quality, labor, and food cost goals
- execute production schedules and ensure accurate preparation quantities to minimize waste and maximize efficiency
- record production, yields, and waste on production sheets and use data to forecast future needs
- convert recipes and ingredient quantities accurately as batch sizes change
- support inventory control by monitoring ingredient levels, rotating stock using FIFO, and assisting with ordering
- actively participate in shrink prevention and cost-control efforts
- ensure all food is prepared according to standardized recipes, portion controls, and Vallarta quality standards
