Job Requirements

  • Associate's degree in culinary arts or equivalent training
  • Five years experience in restaurant, hotel, catering service or similar food service establishment
  • Ability to comply with food safety and hygiene standards
  • Proficiency in various cuisines including traditional, international, and trendy
  • Experience with reduced-oxygen packaging cook/chill techniques
  • Competence in food temperature and inventory record keeping
  • Understanding of county, state, and federal food regulatory requirements

Job Qualifications

  • Associate's degree in culinary arts or equivalent training under an executive chef
  • Five years experience in restaurant, hotel, catering service, or similar food service establishment

Job Duties

  • Perform as first assistant to the Executive Chef
  • Prep and cook food in various kitchens including VIP suite and cook/chill areas
  • Use protection devices to prevent foodborne illness transmission
  • Demonstrate proficiency in traditional, international, and trendy cuisine
  • Coordinate and cook in specialized reduced-oxygen packaging cook/chill food production
  • Record statistics such as food and storage temperatures, meal tallies, inventory, and guest charges
  • Adhere to county, state, and federal regulatory agency requirements
